Vegan Lentil Sausages with Sauerkraut

Preparation:

 Sauté the onion in the oil, add all the other ingredients, and cover with cold water. Cook with a lid for 10 minutes (until the potato is cooked), then blend everything and bring to a boil. Gradually add the red lentil flour with a whisk and cook for 2 minutes.

Remove from heat and let cool. Shape the mixture into sausages and wrap each individually in plastic wrap. Let rest overnight in the fridge.

Caramelize the sugar in a pan, add the soy sauce and a very small amount of water to form a syrup, adjusting salt to taste. Sauté the lentil sausages until they achieve a nice caramelized exterior. Serve with a sauerkraut salad.

Makes 12 sausages
Copper onion - 30 g
Extra virgin olive oil - 10 g
Tomato paste - 10 g
Potato - 100 g
Salt - 10 g
Chili pepper - to taste
Fennel seeds - 1 g
Cold water - 500 g
Red lentil flour La Veronese® - 200 g
Brown sugar - 20 g
Soy sauce - 20 g
