Sweet Bread with Plant-Based Yogurt – Ilaria Moretti

Preparation

 First, preheat the oven to 180°C (356°F). In a mixing bowl, combine the yogurt, La Veronese® Whole Oat Flakes, pumpkin seeds, sunflower seeds, sultana raisins (or other dried fruit), almond butter, baking soda, lemon juice, salt, vanilla, and cinnamon. Once all ingredients are thoroughly mixed, spread the dough evenly into a baking pan lined with parchment paper.

Next, slice an apple and place the slices on top of the dough, finishing with a sprinkle of cinnamon or vanilla as desired.

Finally, bake for about 30–35 minutes and, once the bread reaches the desired golden color, it will be ready to enjoy!

For a variation, you can divide the dough and add carob flour to make the dough sweeter.

Yogurt – 500 g
La Veronese® Whole Oat Flakes – 250 g
Sultana raisins – 50 g
Sunflower seeds – 50 g
Pumpkin seeds – 50 g
Almond butter – 1 tablespoon
Baking soda – 1 teaspoon
Lemon juice – ½ teaspoon
Salt – ½ teaspoon
Vanilla and cinnamon – to taste
Apple – 1
Carob flour (optional)
