In a large bowl, combine La Veronese® whole oat flakes, grated carrots, almond flour, cream of tartar, lemon zest, lemon juice, and vanilla (if desired).
Add the egg and mix well until a homogeneous consistency is achieved.
Gently fold in the whipped egg white, or if you prefer, you can mix the entire egg white directly into the mixture.
Add a handful of chopped, rehydrated sultanas to the dough and mix well.
Preheat the air fryer to 180°C (356°F).
Form small balls from the mixture and place them on the air fryer grid.
Cook in the air fryer for 15–20 minutes, or until the scamille are golden and crispy.
If you don’t have an air fryer, you can bake the scamille in a preheated oven at 180°C (356°F) for 15–20 minutes, or until fully cooked.
Once cooked, let them cool slightly before enjoying. Serve and savor these delicious, crunchy scamille!
