Savarin with Peas, Almonds, Chocolate, and Berries

Ingredients for 20 savarins:

  • 100 g cane sugar
  • 60 g 70% dark chocolate
  • 40 g sunflower oil
  • 100 ml water
  • 50 g La Veronese® pea flour
  • 40 g La Veronese® rice flour
  • 40 g almond flour
  • 20 g unsweetened cocoa powder
  • 4 g baking powder

Preparation:

Weigh all ingredients separately and melt the chocolate in a small saucepan.

Make an emulsion with sunflower oil and water, then add the sugar and all flours, sifting the baking powder together with the cocoa.

Grease a mold with sunflower oil and almond slivers. Pour the batter until about 2/3 of the mold’s height and bake in a ventilated oven at 180°C (356°F) for 15–20 minutes.

Remove from the oven and decorate the center with berry sauce and mixed berries.
