To prepare the pea gnocchi with tomato sauce, simply pour La Veronese® Pea Flour into a large bowl, add lukewarm water, a pinch of salt, and one egg.
Mix with a fork to combine the ingredients, and when the dough becomes thicker, use your hands to knead it.
Transfer the dough onto a work surface and roll it into finger-thick strips.
Cut the strips into pieces of the desired size to create your gnocchi and arrange them on a floured tray.
Boil the gnocchi in water; when they float to the surface, they are ready.
To prepare the sauce, add a drizzle of oil to a pan with tomato sauce, cook for a couple of minutes, and season with salt to taste.
Serve the gnocchi while still hot, adding grated pecorino cheese and a basil leaf for garnish.
