Combine Chickpea Flour, Rice Flour, and Amaranth Flour from La Veronese® in a bowl, then gradually add water, olive oil, and salt while stirring. Knead quickly until you obtain a compact dough.
Roll out the dough using a bit of amaranth flour to prevent sticking.
For the filling, prepare a base with soy yogurt, adding salt, and then add coarsely chopped tomato, onion, and basil.
