Preparation

 Combine Chickpea Flour, Rice Flour, and Amaranth Flour from La Veronese® in a bowl, then gradually add water, olive oil, and salt while stirring. Knead quickly until you obtain a compact dough.

Roll out the dough using a bit of amaranth flour to prevent sticking.

For the filling, prepare a base with soy yogurt, adding salt, and then add coarsely chopped tomato, onion, and basil.

Bake for about 30 minutes or until the filling is set and cooked through.

Rice Flour de La Veronese® – 100 g
Amaranth Flour de La Veronese® – 50 g
Water – 200 ml
Olive Oil – 30 g
Salt – to taste
Filling:
Soy yogurt
Tomato
Onion
Basil
