Buckwheat, also known as “black wheat,” is an herbaceous plant belonging to the Polygonaceae family. Its scientific name is Polygonum fagopyrum, derived from Latin: “fagus” meaning beech, and “pyrum” meaning wheat. Buckwheat is associated with the beech tree because of its triangular seeds, and named after wheat because its flour is obtained by grinding the seeds, similar to wheat flour.

Buckwheat is often mistakenly classified as a cereal, but it does not belong to the Poaceae family. It is considered a pseudocereal (like amaranth and quinoa) because its seeds share similar nutritional properties and culinary uses with true cereals.

Originally from Siberia and Manchuria, the buckwheat plant thrives in climates that are not excessively cold, requiring temperatures above 20°C (68°F). This flowering plant is sensitive to temperature fluctuations and needs ample water. Its cylindrical stem changes color to indicate optimal harvest time: green when young, turning reddish-brown as it matures, and dark when ready for harvesting.
