To manage these imbalances and prevent complications, diabetic individuals are often treated with insulin therapy.

Additionally, a balanced diet supervised by a doctor or nutritionist is crucial to enhance the benefits of therapy.

Carbohydrates are the main energy source for the body, making up about 55–60% of the daily macronutrient intake. Since carbohydrates consist of glucose (sugar), regulating the amount consumed at each meal is particularly important for diabetics.

Consumption of foods like pasta is not necessarily a concern: many new types of pasta on the market are made with alternative flours to wheat and feature an optimal macronutrient distribution.

2. Which gluten-free pastas are recommended for diabetics? Yes to sorghum and teff

In nutrition, each food has specific properties that distinguish it from others. The same applies to unconventional flours used in gluten-free pasta.

For a flour to be suitable for diabetics, it should have a low glycemic index (GI), ideally lower than wheat flour.

Legume-based pastas (peas, lentils, chickpeas) are also very interesting due to their high protein content.

A balanced diet should be varied without eliminating foods unnecessarily, except in cases of medical conditions that restrict certain foods.

Corn and rice flour should not be demonized: portion size is key. A complete diet includes all types of food to ensure proper nutrient intake.

Many low-GI foods are excellent allies for blood sugar control.

For example:

  • Seafood (IG ±5): shrimp, scampi, crab – perfect for low-GI meals.
  • Vegetables and nuts (IG ±15): zucchini, peppers, broccoli, pine nuts, walnuts, hazelnuts – ideal for making flavorful pestos. Blanch the vegetables, blend with nuts, a drizzle of olive oil, and Parmesan (IG = 0), then mix with pasta.
  • Fresh cheeses (IG ±30): ricotta pairs well with lean meats like speck (IG ≈ 0) and a sprinkle of chopped nuts.

Many ingredients can be combined creatively to make delicious recipes while keeping blood sugar under control. Moderation is key: all foods can be included in appropriate portions regardless of their GI.
