For the rice, use 8 tablespoons of “Nanin” Vialone Nano Rice by La Veronese®, boiled without salt the day before. Make sure the rice is cold and dry.
Blend an apple or a pear to obtain a smooth puree and combine it with the boiled rice, adding a little lemon zest to enrich the flavor.
Wear kitchen gloves and lightly oil your hands with olive oil to handle the mixture and form small balls.
Lightly coat the balls in Quick White Polenta Flour to add extra crispiness.
Preheat the oven to 180°C (fan) or an air fryer, and cook for about 15 minutes.
