In a bowl, quickly knead all ingredients with your hands except the apples. Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes.
Cut the apples into cubes, add a teaspoon of sugar, some cinnamon, and ginger (optional: raisins and pine nuts). Mix well to evenly distribute the spices and sugar.
Take the dough and divide it into two parts. Roll out the dough to about 5 mm thickness and form two discs, keeping the one for the base slightly larger than the baking pan.
Place the base dough disc in a greased or parchment-lined pan, making sure to raise the edges slightly. Lightly prick the surface with a fork. Pour in the apples and cover with the second disc of dough. Make a few slits on top, brush with a little milk, and sprinkle with granulated sugar.
Bake in a preheated oven at 170°C for 35–40 minutes.
