To prepare the dough for the focaccia base, cook Superfine Carnaroli Rice by La Veronese® and set it aside in the refrigerator to cool overnight.
When the rice is sufficiently cold, place it in a blender with the eggs, water, salt, and pepper to taste. Blend until you get a homogeneous dough. If the mixture is too difficult to work with, gradually add water to reach the desired consistency.
Spread the dough on a baking tray lined with lightly greased parchment paper and shape it as desired. Bake in a preheated oven at 180°C (356°F) for about 30 minutes, or until the surface is golden.
This dough can also be used as a pizza base: simply bake the base first following the instructions above. Once baked, add your favorite pizza toppings and, if necessary, return to the oven until the toppings are cooked.
