Prepare the batter by mixing rice flour and pea flour with sparkling or still water until you obtain a smooth, homogeneous batter, not too runny and not too thick.
Blanch the cauliflower and broccoli for five minutes. Heat the oil for frying in an air fryer at 180–200°C (356–392°F).
Dip the cauliflower and broccoli into the prepared batter and fry them in the air fryer for about 20 minutes, or until golden and crispy. Add a drizzle of oil during cooking.
Meanwhile, prepare the sauce: blend the celery leaves, garlic, and ginger with soy yogurt, apple cider vinegar, and carob extract (or honey) until smooth and creamy.
Serve the fried vegetables hot, accompanied by the celery leaf sauce.
